Mix Dal Khichdi: A Comforting One-Pot Meal
Mix Dal Khichdi is a hearty and flavourful Indian dish made with rice, lentils (dal), and a blend of warming spices. It's a complete meal in itself, packed with protein and fibre, making it perfect for a comforting lunch or a light dinner. This recipe is easy to follow and comes together in a pressure cooker for a quick and convenient meal.
Ingredients:
- ¾ cup Darsa Organics White Rice
- ½ cup Darsa Organics Mixed Dal
- 2 tbsp Darsa Organics Oil + Ghee
- ½ tsp Darsa Organics Cumin Seeds (Jeera)
- 1 Onion, finely chopped
- 2 Tomatoes, finely chopped
- 3 Green chillies, chopped
- 2 tbsp Finely chopped coriander leaves
- ¼ tsp Darsa Organics Turmeric powder
- ½ tsp Darsa Organics Chilli powder
- 2 tsp Darsa Organics Coriander powder
- Salt to taste
- 4-5 cups Water
Preparation:
- Heat oil and ghee in a pressure cooker. Add cumin seeds and let them splutter.
- Add onions and fry until translucent.
- Add tomatoes and green chilies, and fry until the oil separates.
- Add turmeric, chili powder, coriander powder, and salt. Mix well and fry till the raw smell disappears.
- Rinse the soaked rice, dal, and coriander leaves. Stir fry them for 2 minutes until completely coated with the masala.
- Add 4-5 cups of water and pressure cook for 3-4 whistles.
- Once cooked, turn off the flame and let the pressure release naturally.
- Enjoy your delicious Mix Dal Khichdi!
Notes:
- You can adjust the amount of chili powder according to your spice preference.
- For a richer flavor, add a tablespoon of chopped cashews or peanuts while frying the onions.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stovetop or in the microwave.
