Mix Dal Khichdi: A Comforting One-Pot Meal

Mix Dal Khichdi is a hearty and flavourful Indian dish made with rice, lentils (dal), and a blend of warming spices. It's a complete meal in itself, packed with protein and fibre, making it perfect for a comforting lunch or a light dinner. This recipe is easy to follow and comes together in a pressure cooker for a quick and convenient meal.

Ingredients:

  1. Heat oil and ghee in a pressure cooker. Add cumin seeds and let them splutter.
  2. Add onions and fry until translucent.
  3. Add tomatoes and green chilies, and fry until the oil separates.
  4. Add turmeric, chili powder, coriander powder, and salt. Mix well and fry till the raw smell disappears.
  5. Rinse the soaked rice, dal, and coriander leaves. Stir fry them for 2 minutes until completely coated with the masala.
  6. Add 4-5 cups of water and pressure cook for 3-4 whistles.
  7. Once cooked, turn off the flame and let the pressure release naturally.
  8. Enjoy your delicious Mix Dal Khichdi!

Notes:

  • You can adjust the amount of chili powder according to your spice preference.
  • For a richer flavor, add a tablespoon of chopped cashews or peanuts while frying the onions.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stovetop or in the microwave.
