
Brazilian style Mung Bean & Vegetable Coconut Stew
Creamy and comforting
Ingredients (4 servings):
- 1 cup Darsa Mung Bean with skin
- 1 cup chopped sweet potato
- 1/2 cup diced tomato
- 1/2 cup bell pepper
- 1/2 onion, chopped
- 1 tsp paprika
- 1 cup coconut milk
- Salt and pepper to taste
Instructions:
- Boil mung beans until soft.
- In another pan, sauté veggies with spices.
- Add beans and coconut milk. Simmer until thick.
