Brazilian style Mung Bean & Vegetable Coconut Stew

Creamy and comforting

Ingredients (4 servings):

  • 1 cup Darsa Mung Bean with skin
  • 1 cup chopped sweet potato
  • 1/2 cup diced tomato
  • 1/2 cup bell pepper
  • 1/2 onion, chopped
  • 1 tsp paprika
  • 1 cup coconut milk
  • Salt and pepper to taste

Instructions:

  1. Boil mung beans until soft.
  2. In another pan, sauté veggies with spices.
  3. Add beans and coconut milk. Simmer until thick.
