Sweet Mung Dessert with Coconut Cream

Throughout Southeast Asia, mung beans are frequently incorporated into both savory and sweet dishes. In countries like Thailand and Vietnam, mung beans are boiled and sweetened with coconut milk to make comforting desserts. Folk healers value mung beans to reduce inflammation and heat, especially during hot seasons or fevers

Ingredients (4 servings):

  • 3/4 cup Darsa split mung beans
  • 1/2 cup sugar
  • 3 cups water
  • 1 tbsp tapioca flour (or cornstarch)
  • 1/2 cup coconut cream
  • 1/4 tsp salt
  • 2 pandan leaves (optional)

Instructions:

  1. Steam mung beans until soft (about 20 minutes).
  2. Boil water with pandan and sugar, add flour slurry to thicken.
  3. Stir in mung beans. Top with warm coconut cream mixed with salt.
