Ingredients:

  • 3/2 cup Darsa Organics Whole Moong beans (for sprouts)
  • 1 tablespoon onions, finely chopped
  • 1 small tomato, finely chopped
  • ¼ cup cucumber, finely chopped
  • 1 small carrot, chopped or grated
  • 1 small green chili (deseeded & chopped) or crushed black pepper (optional)
  • 2 tablespoons coriander leaves or celery, finely chopped
  • Salt to taste
  • 1 tablespoon lemon juice or 1 teaspoon apple cider vinegar
  • ¼ teaspoon chaat masala (optional)
  • ½ cup cornflakes or wheat flakes (optional)
  • 1 tablespoon fresh, grated coconut (optional)
  • ¼ inch ginger, grated (optional)
  • 2 to 4 fresh mint leaves, finely chopped (optional)

Preparation:

  1. Rinse the sprouts. Boil 2 cups of water, add sprouts, turn off heat, and drain thoroughly.
  2. Rinse all vegetables, herbs, and ginger (if using). Peel and grate carrots and ginger. Finely chop onions, tomatoes, cucumber, coriander leaves, and green chili (if using).
  3. In a large bowl, combine sprouts, vegetables, ginger (if using), green chilies (if using), and coriander leaves.
  4. Add salt, lemon juice, and toss well.
  5. Transfer to a serving bowl and top with your desired options: cornflakes, poha chivda, chaat masala, black pepper, mint leaves, or fresh coconut.

Notes:

  • For using other types of sprouts, cook them until tender before adding them to the salad.
  • Adjust the amount of spices and herbs to your preference.
  • Serve immediately for the freshest flavour.
