Easy and Delicious Sprouts Salad (Vegan & Gluten-Free)
This refreshing and flavourful sprouts salad is packed with protein and nutrients, making it a perfect light meal or side dish. It’s vegan, gluten-free, and can be easily customized with your favourite sprouts and vegetables.
Ingredients:
- 3/2 cup Darsa Organics Whole Moong beans (for sprouts)
- 1 tablespoon onions, finely chopped
- 1 small tomato, finely chopped
- ¼ cup cucumber, finely chopped
- 1 small carrot, chopped or grated
- 1 small green chili (deseeded & chopped) or crushed black pepper (optional)
- 2 tablespoons coriander leaves or celery, finely chopped
- Salt to taste
- 1 tablespoon lemon juice or 1 teaspoon apple cider vinegar
- ¼ teaspoon chaat masala (optional)
- ½ cup cornflakes or wheat flakes (optional)
- 1 tablespoon fresh, grated coconut (optional)
- ¼ inch ginger, grated (optional)
- 2 to 4 fresh mint leaves, finely chopped (optional)
Preparation:
- Rinse the sprouts. Boil 2 cups of water, add sprouts, turn off heat, and drain thoroughly.
- Rinse all vegetables, herbs, and ginger (if using). Peel and grate carrots and ginger. Finely chop onions, tomatoes, cucumber, coriander leaves, and green chili (if using).
- In a large bowl, combine sprouts, vegetables, ginger (if using), green chilies (if using), and coriander leaves.
- Add salt, lemon juice, and toss well.
- Transfer to a serving bowl and top with your desired options: cornflakes, poha chivda, chaat masala, black pepper, mint leaves, or fresh coconut.
Notes:
- For using other types of sprouts, cook them until tender before adding them to the salad.
- Adjust the amount of spices and herbs to your preference.
- Serve immediately for the freshest flavour.
