
Chinese Sweet Mung Bean Soup (Lü Dòu Tāng)
A Light Cooling Summer Dessert
In Traditional Chinese Medicine, mung beans (known as lǜ dòu) are used as a cooling food to combat internal heat and eliminate toxins. They are often consumed in the form of a lightly sweet soup during summer to prevent heatstroke and skin eruptions. Ancient Chinese wisdom holds that mung beans help purify the blood and clear inflammation, with a common saying suggesting that mung bean soup can prevent “a hundred diseases.”
Ingredients (4 servings):
- 1 cup Darsa Whole Mung Beans
- 6 cups water
- 1/3 cup rock sugar (or to taste)
Instructions:
- Rinse mung beans and soak for 1 hour (optional for faster cooking).
- Bring to a boil with water, then simmer for 35–40 minutes until beans are soft.
- Add rock sugar, stir to dissolve. Serve warm or chilled.
